MG’s Tomato Sauce aka “Quick Sauce” Recipe

Ingredients: 2 (28 oz.) cans crushed tomatoes 1-1¾ cans water 8 cloves garlic, minced (or to taste) 8-10 fresh basil leaves, chopped or 2 Tbsp freeze-dried basil, or to taste 2 tsp salt, or to taste olive oil (about 1/4 cup)

Directions:Cover the bottom of a sauce pot with olive oil (3-4 turns or so around bottom of pan) and sauté garlic slightly. Add tomatoes, water, basil and salt and stir. Bring ingredients to a slight boil and lower heat to a simmer. Simmer sauce for about 2 - 3 hours, stirring occasionally. Serve with the pasta of choice.
If adding meatballs (see recipe index) add them after the sauce has been reduced to a simmer.
If adding pork, chicken, sausage, meatballs, braccioli, etc...prepare them by browning them in olive oil first then add to sauce. |

Notes: The aromas from this sauce will surely send you to the kitchen so you can dip some good italian bread, just for a taste. (THAT....is personally one of my pet peeves, so I just turn my head or chase Matt out .... kidding.....I use to chase him out, but now he is my official taster, due to he can make "sauce" better than me and he adjusts the seasonings for me.... thanks Matt :) Update2023: When Mom would say she was making “Quick Sauce” it was without any type of meat, and therefore did not have to cook as long. Matthew used to live with us when he, and Keith, went to UNCW.
