1/4 cup mashed potatoes, cooled
2 c coconut
2 c confectioner's sugar
1 tsp almond extract

1 block of unsweetened chocolate

Directions:
Directions:
Combine first four ingredients, adding more sugar if necessary. Spread in a greased 8x8" pan.

Melt unsweetened chocolate. In a microwave. this only takes a short time - so be careful not to burn the chocolate.

Cover the coconut mix with a thin layer of the melted chocolate.

Let the candy refrigerate so that the chocolate can set.

Option:
Roll the coconut mixture into balls and dip into chocolate.

These really taste like Almond Joy candy without the almonds.

You can use vanilla extract if you don't have almond extract.

I have only used instant potatoes, and they work fine.
