3 lbs onions,
1/2 c butter,
1 tbps oil,
1 tbps flour,
3 c chicken broth,
3 c beef broth,
1/2 c dry red wine,
salt and pepper to taste,
french bread,
4 oz gruyere cheese

Directions:
Directions:
thinly slice onions (use more than 1 type) and saute in butter and oil over medium heat in heavy skillet until soft and golden (about 35 minutes)....sprinkle with flour, stir and cook 1 minute longer...stir in chicken broth, beef broth, and red wine. add salt and peeper. cover and simmer at least 1/2 hour. it is much better if simmered longer. place piece of french bread in soup crock....pour in soup....top with cheese, place under broiler for 1-2 minutes or until cheese is melted
