2 C water
1/2 tsp salt
4 potatoes
1 small onion
1 C celery
Parsley flakes

WHITE SAUCE - 1 C milk
1 tbsp margarine
1 1/2 tbsp flour
1/4 tsp salt
dash pepper

Directions:
Directions:
Pare and dice potatoes. Cut celery and onion fine. Add prepare vegetables to salted boiling water. Cook until vegetables are tender. Do not drain. The liquid is part of the soup.
Prepare white sauce - Melt margarine in a sauce pan. Remove from heat - stir in flour, salt and pepper. Add milk gradually while stirring. Cook until thick as cream, stirring constantly.
Add sauce to vegetables and stock.
Reheat and serve hot.
