Ingredients:  
Ingredients:  
Four-lb. Center Cut Loin of Pork;
Olive Oil;
Salt and Pepper to taste;
Pinch of Rosemary and Thyme;

Sauce:
Four Tbsp. butter;
Four Tbsp. sugar;
Four oz. Wild Turkey or other bourbon;
One cup of candied cherries;
Two cups of pork gravy - dash of gravy master;
Two tsp. each of rosemary, thyme, and sage.

Directions:
Pre-heat oven to 350 degrees.
Rub loin of pork with olive oil, salt and pepper, and pinch of rosemary and thyme;
Bake 20-minutes per pound or about 1 1/2 hours.

Make the sauce:
Slowly simmer butter and sugar together in a sauce pan until the sughar begins to carmelize;
Add the Wild Turkey and cherries and let the liquid reduce by half;
Add the gravy and herbs and simmer for ten minutes;
Season with salt and pepper.
