1 pound sweet potatoes
3/4 cup sugar
1 tsp cinnamon
1/2 tsp nutmeg
salt
1/4 tsp vanilla extract
2 drops lemon flavoring
2 eggs, lightly beaten
1 can evaporated milk
1/2 cup regular milk
pie crust
whipped cream

Directions:
Directions:
Boil sweet potatoes until soft,mash and mix in a large mixing bowl, combine sweet potatoes, sugar, cinnamon, nutmeg, a pinch of salt. 1/2 tsp vanilla extract, lemon flavoring, add eggs slowly add evaporated milk and regular milk, mix well pour into pastry lined pie pan. cover edge of pie crust with foil. bake at 375º for 25-minutes. remove foil and bake for 25-30 minutes or more, until knife comes out clean.
Serve with whipped cream (optional)
