1 large (16 oz.) bag of Spring green salad mix
2-3 Gala apples, chopped
1 bag Sargento 6 cheeses (approx. 1 cup)
1/2 c. chopped red onion
Cashew nuts as desired; at least 1 cup of halves

Dressing:
1 c. canola oil
1/4 c. sugar or Splenda
1/3 c. rice vinegar
1 tsp. mustard
2 T. poppy seeds
1/4 tsp. salt

Directions:
Directions:
Cut apples first and leave them at the bottom of the serving bowl. Put Spring greens, cheese and onions over apples. Cover and refrigerate.

Mix dressing ingredients and refrigerate.

When ready to serve, toss apple mixture in bowl, pour dressing on salad, mix again and cover with cashew nuts.
