2 cups flour
1 cup butter or margarine
½ confectioners sugar
4 eggs
Grated lemon rind optional (zesty!)
2 cups sugar
1 tsp. baking powder
½ tsp. salt
5 tbsp. lemon juice
Directions:
Directions:
Mix together flour, butter, and confectioners sugar. Press into 9” x 13” pan.
Bake at 350 for 30 minutes until lightly brown. Cream eggs, sugar, baking powder, salt, and lemon juice until light and fluffy.
Pour over hot crust and bake 25 more minutes or until solid.
Cool completely before cutting into small squares.
