1/2 lb. hamburger
3/4 c. chopped onion
3/4 c. chopped celery
3/4 c. diced carrots
1/2 tsp. dried basil
1 tsp. parsley flakes
6 Tbls. butter
3 c. chicken broth
4 c. potatoes
1/4 c. flour
8 oz. Velveeta cheese
1 1/2 c. milk
1/4 c. sour cream

Directions:
Directions:
Brown hamburger. Saute onion, carrots, celery in 2 Tbls. butter. Add chicken broth, potatoes, basil, parsley and beef mixture. Bring to a boil. Cover and simmer one hour. In skillet, melt remaining butter. Add flour. Cook until bubbly. Add to soup. Bring to a boil and reduce heat. Add cheese and milk. Add sour cream and serve.
