5 c broccoli, finely chopped
4 c chicken stock
2-3 tbsp onions, chopped
5 tbsp butter
4 tbsp flour
3 c half and half or light cream

Directions:
Directions:
Cook together the broccoli, 2 c chicken stock and onions until tender and set aside. Blend together the flour and butter, then add the cream and cook 3 minutes stirring constantly. Stir in the broccoli mixture and the remaining chicken stock and simmer 3 minutes more. Add pepper to taste and garnish with a piece of broccoli flowerette that you have put aside and saved. If the soup is not thick enough add more flour.
