1 lb sweet potatoes
1/2 c butter
1 c white sugar
1/2 c milk
2 eggs
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1 tsp vanilla extract
1 (9 inch) unbaked pie crust

Directions:
Directions:
Boil sweet potatoes whole in skin for 45 to 50 minutes, or until done. Run cold water over the sweet potato and remove skin. Break apart sweet potatoes in a bowl. Add butter & mix well. Stir in sugar, milk, eggs, nutmeg, cinnamon & vanilla. Mix until combination is smooth and consistent. Pour filling into an unbaked pie crust. Bake at 350 for 55 to 60 minutes, or until knife inserted in center comes out clean.
