3 1/2 cups sugar
1 cup oil
4 eggs
2 cups mashed sweet potatoes (canned is fine)
2/3 cup water
3 1/2 cups plain flour
3 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp vanilla
1 cup chopped nuts , optional

Directions:
Directions:
Preheat oven to 350
Grease and flour 2 loaf pans.
Mix together sugar and oil. Add eggs, one at a time. Sift together dry ingredients and add to batter. Add vanilla. Stir in nuts. Pour into prepared pans, filling half full. Bake at 350 for 1 hour.
