2 boneless chicken breasts
salt and pepper
1/2 cup favorite BBQ sauce
1 cup of fresh corn niblets
1 avocado, cubed
1/2 cup cherry tomatoes, halved
1/4 cup red onion, sliced
1/2 cup black beans, drained and rinsed
6 cups chopped green leaf lettuce, or iceburg
1-2 cups Pepper Jack Cheese, shredded
Crispy Tortilla strips

Grill the chicken breasts and baste with BBQ sauce. Set aside to cool. In a large bowl, combine the salad ingredients. When the chicken has cooled, slice into strips or cubes. Add to the salad bowl. Serve with dressing, shredded Pepper Jack cheese, and crispy tortilla chip strips.
 

Creamy Cilantro Ranch Dressing
Ingredients:

1 cup mayonaise or plain Greek yogurt
1/2 cup cilantro, chopped finely
1/4 cup lime juice
1/4 cup olive oil
1/2 tsp. cumin
2 garlic cloves
salt and pepper to taste

Blend all ingredients in a processor until smooth. Refridgerate and let sit at least 2 hours for best results.
