1 lb chicken breast
4 T cloves garlic, minced
1 onion, diced
3 cans of your favorite beans, drained (I use pinto, black, and kidney)
1 4 oz can of diced chilis
1 can of corn, drained
1 can of diced tomatoes, undrained
3/4 c ketchup
1/4 c brown sugar
1 T yellow mustard
3 T apple cider vinegar
3 T worchestire sauce
1/2-1 tsp chili powder (to taste)
1 1/2 tsp cumin
1 1/2 tsp salt
3/4 tsp pepper
1 T chicken bouillon
1/4-1/2 tsp paprika (to taste)
4 T cornstarch, mixed with 4 T cold water

Lightly grease a 6-quart (or larger) slow cooker with cooking spray. Add all ingredients and give them a stir. Cook on low 6-8 hours or on high 3-4 hours (checking early, thin chicken breasts will cook quicker). When chicken is tender, remove to a cutting board to shred and return to slow cooker. Cook for an additional 20 minutes on LOW.

If desired, add additional water/chicken broth for a less "chunky" chili. Taste and add hot sauce and salt/pepper to taste. Best garnished with cheese, green onions, sour cream, chips and bacon!
