4 lbs chicken thighs, drumsticks, breasts, wings
4 fresh mint leaves - chopped
¼ cup red wine vinegar
½ cup oil
½ tsp salt
½ tsp pepper
2 tsp paprika

*This is also a great marinade for spareribs and steak.

Directions:
Remove excess skin from chicken.
Add all ingredients to a large bowl and marinate in the refrigerator 4-6 hours.
Stir occasionally.

Preheat BBQ medium heat.

Stir again before placing on BBQ. Cook, low and slow, until cooked through, rotating often.

Every Sunday in the nice weather there was a family BBQ. Nonno often cooked the meat outdoors while Nonna was busy cooking a pasta dish, a vegetable and salad. Sunday dinners allowed us all to get together. Eat, laugh and dance.
