2 tbsp brown sugar
2 tsp tomato paste
1/2 cup diced red onions
2 tsp chili powder
1/4 cup apple cider vinegar
8 oz cooked chicken breast
3 cups slaw mix
5 tsp mayonnaise
4 flatbreads
3/4 cup shredded cheddar cheese

1. Make BBQ Chicken- In a medium sauce pot, add brown sugar, tomato paste, red onions, chili powder, and half the apple cider vinegar, stirring to combine. Cook over medium heat for 5 minutes. Season with 1/4 tsp of salt and 1/4 tsp pepper. While sauce is cooking, shred chicken into bite size strands. Add shredded chicken to sauce and cook for another 1-2 minutes, until hot.
2. Make Slaw- In a medium mixing bowl, combine slaw mix with mayonnaise and remaining apple cider vinegar. Season to taste with salt and pepper.
3. Bake Flatbreads- Turn on broiler to 500ºF. Place flatbreads on baking sheet lined with parchment or foil. Place baking sheet on middle rack and toast for 1 minute (no need to wait until oven is preheated). Remove sheet from oven and top flatbreads with BBQ chicken and sprinkle with cheddar cheese. Place sheet back in oven under broiler until cheese has melted.
4. Divide flatbreads onto plates and serve tangy slaw on the side.
