15 oz Pinto Beans
4.5 oz BBQ sauce
6 oz corn kernels
4 oz crema
3 tsp BBQ seasoning
2 green onions
16 oz ground meat (beed, turkey)
4 oz shredded cheddar cheese
8 oz corn muffin mix
Directions:
Directions:
1. Prepare ingredients and make batter. Preheat oven to 400º
Trim and thinly slice green onions. Separate white and green parts. Drain beans. Reserve 1 tsp corn muffin mix. Add remaining muffin mix, cheese, and 1/2 cup water to mixing bowl. Stir until combined and mixture reaches the consistency of pancake batter. If too thick, add additional water until reaches desired consistency

2. Cook the meat
Cook ground meat with white part of green onion, until no pink remains. Drain. Stir in reserved corn muffin mix and a pinch of salt and pepper.

3. Add the sauce
Add corn, beans, BBQ seasoning and sauce, 1/2 cup water, 1/4 tsp salt and 1/4 tsp pepper. Stir occasionally until combined and slightly thickened. 1-2 minutes

4. Assemble the pie
Top pie with 7-8 dollops of batter. Transfer to oven and bake until topping is golden-brown and firm, 20-25 minutes. Carefully remove from oven. Pan handle will be hot.

Serve family style, topping with crema and green onion tops.
