2.5 T smoked paprika
2.5 T light brown sugar
2 T ground mustard
1 T garlic powder
1 T kosher salt
2 3/4 to 3 lbs baby back ribs

Oven 300º
Line sheet pan completely with foil.. lay another extra long piece of foil dull side face up down the middle (this is what we will bundle ribs with)
Spice rub: paprika, mustard, sugar, garlic powder and salt and mix. Save 3 T for later
Ribs meaty side down and use kitchen shears to snip open membrane and pull off.
Use larger amt of spice rub all over the ribs.
Meaty side face up bundle ribs in the foil. Double wrap if needed, no gags.
Roast with meaty side face up for 1 hours then flip and roast another hour.
Remove from oven and heat temp to 500º
Transfer ribs to cutting board. Pour juices into heatproof bowl. Dispose of foil and put fresh sheet of foil on sheet pan.
Return ribs to sheet pan meaty side up and sprinkle remaining spice mix evenly on top. Use spoon to pat down encouraging it to dissolve.
Ribs in oven uncovered. Roast for 10 min and brush with reserved juices and back in oven 10-15 min.
Transfer to cutting board and rest for few min. Flip to bony side up and cut between the bones.
Serve with extra pan juices
