1 chicken, cut into eights
Mayonaise
Cornflake crumbs
¾ c. brown sugar
1 c. boiling water
¾ c. ketchup
Directions:
Directions:
Smear mayonnaise on each piece of chicken, and coat in cornflake crumbs.
Place in a baking dish at bake at 350º for 1 hour, uncovered. Combine brown sugar with hot water, and mix until sugar dissolves. Add ketchup and mix with a wire whisk until well combined.
Pour over the chicken and bake another hour uncovered.
Double sauce recipe for saucier chicken or for company.
