BBQ Chicken and Parmesan Roasted Yukon Gold Potatoes Recipe

Ingredients: 4 Wings, 4 thighs, 4 Drumsticks Brine, see Recipe 2 cups BBQ sauce, see recipe 4 cups Yukon gold potatoes 1 onion coarsely chopped 1 tsp salt 1 tsp pepper 1/4 cup olive oil 1/3 cup grated Parmesan Cheese Basting Sauce brush

Directions:Preheat oven or grill to 425°
Brine chicken overnight. Remove from brine and pat dry. Coat chicken with olive oil and salt and pepper.
Wash potatoes, pat dry and slice in half. Coat potatoes and onions with olive oil, salt and pepper.
Place chicken on the grill or on a broiler pan with potatoes and onions wrapped in foil.
Cook chicken and vegetables for 20 minutes on 425°, then reduce heat to 350° and cook for another 30 minutes.
Remove chicken and potatoes from oven. Slather chicken on all sides with BBQ sauce. Open foil and cover potatoes with Parmesan Cheese. Place chicken and potatoes back in oven or grill to crisp up for about another 10 minutes. Remove from oven or grill and serve with Zesty Coleslaw. Enjoy. |
