3-pound beef brisket

Marinade
1 ⅛ tsp salt
1 ⅛ tsp pepper
1 ½ tbsp chili powder
¾ tsp crushed bay leaves
1 ½ tbsp liquid smoke

Sauce
2 ¼ tbsp brown sugar
1 - 10.5-ounce bottle of catsup
6 tbsp water
¾ tsp liquid smoke
1 pinch cayenne pepper
3 tbsp Worcestershire sauce
2 ¼ tsp dry mustard
1 ½ tsp celery salt
3 tbsp butter

Mix all of the marinade dry ingredients together. Rub meat with liquid smoke. Rub dry mix onto the fat side of the brisket. Place meat in a roasting pan covered with foil and bake for 4 hours at 325°F. Check at approximately 3 hours for sufficient liquid in the pan. Do not let the meat go dry – it will burn.

About 30 minutes before the meat is done, combine and simmer all of the sauce ingredients for about 15 minutes.

Remove meat from pan while still warm. Pull apart with a fork so that it has a shredded appearance.

Add enough sauce to the meat to make the meat juicy but not runny. Sauce and meat or the meat alone can be frozen.
