1 pork tenderloin (2-3 lbs. total - a pork butt can also be substituted)
6 garlic cloves, cut in 1/2
1/2 stick butter
1 lg. onion, chopped
1 – 10 oz. jar, apple jelly
1/3 c. apple cider vinegar
3 Tbsp Dijon mustard
1/2 tsp. salt
3/4 tsp. black pepper
1/8 tsp. crushed red pepper flakes
1 C apple juice

Slice 12, 1/2" (6 in each loin) holes in loins and insert garlic clove halves. Grill loins 20 mins. - 10 mins. on each side. (This next step can be done on the stove, grill or grill side burner.) In a large Dutch oven or roasting pan, melt butter and then sauté onions in melted butter. Next add jelly, vinegar & mustard; stir to combine once jelly is melted. Add remaining ingredients and cook for 5 mins. Put the loins in a pan and cover.

Cook on grill in a pan for 1˝ - 2 hours in sauce (turning loins every 30 mins.) until meat reaches 160°. Once done, let them sit for 5 mins. Slice loins and serve with remaining sauce. Serves 8.
