BBQ Beef (for Sandwiches) Recipe

Ingredients: 6 pounds of beef (I like to use a piece of meat with little fat, like eye of round.) 1 stalk of celery, diced 3 onions, diced 1 green pepper, diced 1 Tbs. white vinegar 1 Tbs. salt 3 Tbs. BBQ sauce 1 tsp. pepper ½ tsp. paprika ¼ tsp. thyme 1½ water 1 bottle (20-oz) catsup

Directions:Preheat over to 300º
Cut meat into smaller chunks or pieces and remove any bones.
Add all ingredients to a large pan that is oven proof.
Bring ingredients to a boil on top of stove.
Put in oven for 6 hours at 300º
Remove meat from oven and remove any gristle or pieces of fat. Gently shred the meat and mix around in the sauce. Serve immediately on buns or refrigerate until ready to use. This recipe freezes nicely after it's cooked. |

Notes: My first job was working as a car hop at a drive-in. The most popular items on the menu was the BBQ beef sandwiches. I loved them! This recipe is the closest thing I've ever found to the recipe used at the drive-in.
