1-2 beef trip tip roasts, trimmed

BBQ Sauce:
1 cup ketchup
½ cup BBQ sauce
2 cloves garlic, minced
5-6 green onions, diced
1 dash Tabasco sauce
¼ cup soy sauce
2 tsp. Worcestershire sauce
½ tsp. ground pepper
1 tsp. liquid smoke
1 tbsp. yellow mustard
1½ - 2 cups brown sugar

Pierce the meat well, put in a gallon-sized zip lock bag with ½ of the BBQ sauce. Marinate in the refrigerator overnight, turning 1-2 times. Refrigerate remaining sauce to use when serving.

Remove meat from the sauce and wrap in heavy duty foil (double wrap to prevent leaks). Discard sauce in the bag

BBQ at 180º F for about 30-45 mins, then turn up the temp to 225º F until the meat thermometer reads around 148º-155º for a medium center

Remove from heat, let rest for at least 30 minutes to 1 hour in the wrapped foil and towel wrap

The key to tender meat is to cook it on low heat for a long period of time. It allows that fat rendering happens and it softens up the meat.
