8 lb. meaty spare ribs
2 cups beef stock
2 medium onions (chopped)
4 tbsp. oil
4 tbsp. tomato paste
3 tbsp. soy sauce
2 tbsp. worcestershire
2 tbsp. brown sugar
2 tbsp. apple cider vinegar
3 cloves of garlic
1/2 tsp. salt
1/2 tsp. ground pepper
2 bay leaves

1. Put the ribs in a heavy dutch oven type pan.
2. Pour the stock over them.
3. Add bay leaves.
4. Cover pan and let ribs steam over medium heat.
5. Cook ribs for an hour. Remove ribs and set aside. Save the stock.
6. Strain stock and use for sauce.
7. Remove fat and save what's left. Throw away bay leaves.
8. In a sauce pan, add oil and sauté onions until they are lightly browned.
9. Add crushed garlic and cook for another minute.
10. Add stock, ribs, and other ingredients except for salt and pepper. Mix thoroughly. Let simmer for 30 minutes.
11. Preheat oven to 350ºF. Cook ribs for another hour. Baste ribs often, about every 10 minutes.
