2 ½ lbs pork ribs cut into 2” pieces

Sauce
1 c water
½ c vinegar
¼ c shoyu
1 c brown sugar
2 tsp salt
4 cloves garlic crushed
1-2” fresh ginger finely chopped

Garnish
Carrot
Daikon

Directions:
Directions:
Roll ribs in flour (seasoned with salt & pepper) and brown in oil, drain on paper towels. Place ribs in pot and pour sauce over ribs. Cover and simmer till tender (about an hour or two). Serve with hot rice and garnish.
Garnish is optional - Very thinly slice carrot ant daikon, salt for about an hour, rinse and squeeze out water. Mom used to be fancy - she’d cut 5 small wedges lengthwise down carrot. When sliced it would look like a flower.

Mom’s sister Helen (Aunty He and her husband Isa Kondo) owed and operated the Lahaina Bakery on Front Street for many years. He was the baker and she ran the diner. This was one of her many great dishes. I think Mom was always a little homesick for family and Lahaina - for many years she would take us to Hawaii to spend most of the summer.
