Fresh or thawed salmon fillets (enough for 1 - 2 pieces per person)
1 small onion, thinly sliced into rings
1 - 2 lemons, thinly sliced into circles
Salt
Pepper
1/2 stick butter, sliced into thin pieces or grated with a cheese grater
Your favorite BBQ sauce.

Directions:
Preheat oven to 350 degrees. Prepare 9" x 13" pan by spraying it with non-stick cooking spray or lining the bottom with foil.

Place salmon fillets skin side down in a single layer in the pan. Sprinkle each with salt and pepper. Add some pieces of sliced or shredded butter to the top of each fillet. Place several slices of onion rings onto each fillet. Drizzle BBQ sauce back and forth over the tops of the fillets. Add a slice or two of lemon to the top.

Bake at 350 degrees for 20 - 30 minutes (depending on the thickness of the fillets). Check salmon frequently after 20 minutes to ensure that the fillets don't get overcooked. Salmon will turn a light peach color and flake with a fork when done. Serve with baked potatoes and salad for a yummy meal the whole family will love. Caution: Watch for bones when eating.
