5 lbs baby back ribs ( can use larger ribs or country style ribs)
Salt and Pepper
1/2 Cup Thai Sweet Chili (Mae Ploy( Nugget) or any brand

Directions:
Preheat oven to 275* (Optional- remove thin membrane on underside and discard.)
Season both sides with salt and pepper. Place ribs in a roasting pan, cover with double thickness of tin foil. Roast for about 4 hours, discard foil. Carefully lift ribs onto a baking sheet. Spread the sweet chili sauce generously over the ribs.
Place the oven rack near the top of the oven. Turn broil on and broil the ribs for 3-5 minutes or until the chili sauce begins to caramelize.

To freeze: after baking for 4 hrs. wrap in foil and freeze. When ready to use, unwrap frozen ribs, place in pan (no need to defrost) and bake 400* for 15 mins or so until hot. Then proceed to slather on sauce and broil.
