1 -5-6 lb. beef brisket
¼ cup liquid smoke (Wrights Natural Hickory)
Worcestershire sauce, to taste
Celery salt
Onion salt
Garlic salt
Salt
Pepper, fresh ground
¾ cup bar-b-q sauce

Directions:
Directions:
Preheat oven yo 275º
Place meat in a roasting pan. Pour Worcestershire sauce and liquid smoke over both sides of meat. Generously sprinkle both sides of meat with celery, onion, and garlic salts, salt and pepper.

Put lid on Roasting pan or cover with aluminum foil and bake at 275° for 5 hours. (If using a 3 lb. briskest, bake only 3 hours). Pour off half the juice and add bbq sauce on lean side of meat. Bake uncovered fir 30 minutes. Recover and bake an additional 30 minutes.

Cool meat in refrigerator until cold and firm enough to slice thin. Reheat to serve warm.

Can be prepared ahead and sliced, and reheated.
