Olive oil
Balsamic vinegar
Mozzarella cheese
Directions:
Directions:
Cut eggplant in cross slices
Rub with oil and vinegar
BBQ until one side is lightly browned
Turn and cover with sliced cheese.
BBQ until cheese is melted and eggplant is soft .
