5 Lbs. Beef Short Ribs, cut into 4 oz. portions
1 cup Soy Sauce
1/4 cup Rice Wine Vinegar
3 Garlic cloves, peeled & smashed
5 " stalk of Lemongrass, halved & smashed
1 Tbs. Ginger, peeled & minced
1/2 cup Brown Sugar
1 Quart Water
1/2 cup Green Onions, mostly white part
3/4 ts. Red Pepper Flakes
1/4 cup Orange Juice
1/4 cup Hoisin Sauce
2 Tbs. fresh Lemon Juice

Heat Oven to 350º
In Dutch Oven combine the Short Ribs, Soy Sauce, Vinegar, Garlic, Lemongrass, Ginger, Brown Sugar, Water, Green Onions, Red Pepper Flakes and
2 Tbs. Orange Juice. Make sure the Ribs are submerged in the liquid
Bake Ribs, covered, for 3 hours or until meat is falling off the bones
Remove the Ribs and keep warm
Increase Oven to 425º
Drain fat from the cooking liquid and discard fat
Place remaining Juices in medium saucepan with 1/4 cup of Hoisin Sauce and bring to a boil over medium heat, reduce until only about 1 1/4 cups remain
Strain, discard the solids, stir in 2 Tbs. Orange Juice and Lemon Juice
return Ribs and Sauce to Dutch Oven, coating Ribs well with Sauce
Bake 10 minutes
Server with Rice
