BBQ Chicken Pizzas Recipe

Pizza Dough:
1pkg yeast
1/2tsp sugar
3/4c warm water
2 1/2c flour
3Tbsp olive oil
1tsp salt

Sauce:
2 Tbsp unsalted butter
1tsp minced garlic
3/4c ketchup
1/4c red cooking wine
1/4c dijon mustard
2Tbsp lemon juice
1Tbsp worcestershire sauce
1/2tsp chili powder
1/2tsp oregano
1/4tsp pepper

Toppings:
4 boneless, skinless chicken breasts
olive oil
salt
pepper
2c grated gouda cheese

Dough:
Mix water, sugar, yeast. Let stand about 8min. Then add olive oil, salt, and flour.
Knead by had or mixer- run it about 3 min with dough hook. Oil a bowl and place dough in to raise.

When dough has doubled in size punch it down then separate it into 4 sections. Using wax paper that has been oiled shape each pizza crust. Cook on the grill (med temp) for about 3-4min. Bring back inside to dress pizza.

Sauce:
Saute the garlic in the butter until golden. Add the rest of ingredients and simmer for 10min.

Toppings:
Prepare your grill to cook chicken on med heat. Cover the chicken with olive oil, salt and pepper. Then brush with some of the sauce (keep some sauce to use as sauce on dough). Cook chicken until firm and cooked through. Grate cheese and let chicken cool a few minutes before cutting.

Put sauce, cheese and chicken on the cooked side of pizza dough. Place it back on the grill until cheese melts. Serve hot or freeze.

If frozen let thaw (about 1 hour) then put on grill for about 5min. Serves 5 Prep 40 min
