6 Racks of Ribs

The Rub:
1 Box of Brown Sugar
4-6 Tbsp. Paprika
sprinkle of cayenne pepper
sprinkle of hot shot pepper/red pepper mix,
sprinkle of seasoned salt
1/4 ]to 1/2 tsp. garlic powder
1 to 1 1/2 tsp onion powder
sprinkle of pepper
1/2 to 1 tsp. dry mustard.

Preheat oven to 275º. If you do not use disposable cookie sheets, then line 3-4 cookie sheets (even over the sides), with heavy duty aluminum foil. I cut the ribs into 3 slabs for easier handling. Sprinkle the rub on both sides and rub into the meat. Turn and do the same. Be generous. Roast for 45 min. to an hour. Remove from oven, turn them over, and rotate the racks. Roast another 45 min. to an hour. If a lot of juice/water develops in pan, pour it off or they will poach and be tough. Do this every hour. They take about 4 1/2 hours to caramelize and become candied meat. Enjoy!

Note: The amounts for the rub are guesses. I use a TON of paprika and more onion powder than garlic powder. I don't measure. Also, if you are making a smaller batch, save half of the rub before you start using it so you have a batch for another time.
