2c fresh shitake muxhrooms
1 ˝lbs thin cut chicken
2T vegetable or peanut oil
3 cloves garlic chopped
1in ginger root chopped or grated
1 orange zested
˝ red bell pepper diced
6-8oz sliced water chestnuts drained and chopped
3 scallions chopped
3T hoisin
˝ large head of iceberg lettuce core removed head quatered
salt and pepper

Directions:
Remove tought stems from mushrooms and brush with a damp towel to clean. Slice the mushrooms. Chop chicken into small pieces.
Preheat large skillet or wok to high.
Add oil to hot pan. Add chicken to the pan and sear meat by stir frying a munute or 2. Add mushrooms and cook another minute or 2. Add salt and pepper to taste, then the garlic and ginger. Cook a minute more. Put zest into pan, add teh bell pepper, chopped water chestnuts and scallions. Cook another minute, continuing to stir fry mixture. Add hoisin sauce and toss to coat the mix evenly. Transfer the hot chicken mix to serving platter and pile the quatered wedges of crisp iceberg lettuce along side.
