Ingredients: Marinade
1/2 cup reduced sodium soy sauce 1 1/2 cups dry sherry 2 large cloves garlic, minced 2 T minced fresh ginger
4 lbs chicken,cut up, or 4 small whole skinned and boned chicken breasts
Sauce
1/2 cup hoisin sauce 1 cup dry sherry 1/2 cup ketchup 1/4 cup brown sugar 1 clove of garlic, minced

Directions: |
Directions:Combine marinade ingredients and pour over chicken pieces in a shallow pan. Marinate for several hours, preferably overnight, turning pieces occasionally if the marinade doesn't cover them completely.
Combine sauce ingredients. Remove chicken pieces from the marinade, place in a shallow pan and cover with sauce.
Indoors: Bake the chicken pieces at 350º for 45-60 minutes, turning once, or until chicken is done. Baste several times with the sauce. If using breasts, just cook for 30 minutes.
Outdoors: Remove from marinade and place on grill. Baste with marinade, not with the sauce. Seven minutes before the chicken is done, spoon sauce over both sides of chicken and continue grilling, basting with sauce until done. If you baste with sauce too soon, the sugar will cause it to caramelize and burn. |
