Dry Rub

• 2 Tbsp. paprika
• 1 Tbsp. Tbsp. brown sugar
• 2 clove(s) garlic, crushed with garlic press
• 1 tablespoon of garlic powder
• 2 Tsp. salt
• 2 Tsp. chili powder
• 1 1/2 Tsp. coarsely ground black pepper
• 1 Tsp. ground cumin
• 1/4 Tsp. ground red pepper (cayenne)
• 4 racks baby back ribs

Sauce

• 1/2 Tsp. salt
• 20 oz. ketchup
• 1 cup(s) apple cider or apple juice
• 2 Tbsp. Worcestershire sauce
• 2 Tbsp. molasses
• 2 Tbsp. cider vinegar
• 2 Tbsp. brown sugar
• 2 Tbsp. yellow mustard
• 1/2 Tsp. ground black pepper
• 1/4 Tsp. ground red pepper (cayenne)
• 1/4 Finely diced sweet onion

1. Rub mixture all over ribs and wrap in plastic overnight in the refrigerator or let the ribs sit out for two hours before cooking.
2. BBQ Sauce – In a saucepan, carefully not to burn the sauce, bring the sauce up to a slow boil at medium high heat. Reduce heat to low and simmer (#1 to low), uncovered, 40 minutes to an hour minutes or until sauce thickens slightly, stirring occasionally. Makes about 2 1/2 cups. Refrigerate for 2 hours and warm before grilling. Save 1 cup for serving with ribs.
3. In a large pasta pot with a strainer insert, pour in 2-3 cups of water, but not enough to submerge the bottom of the strainer insert and bring to a boil. Add a tablespoon of garlic powder, excess dry rub, two Bay leaves, and tablespoon of salt to the water. Place ribs vertically in the pot’s strainer insert and cover. Steam ribs 1 hour on Medium high heat. Preheat grill or oven to 350 degrees F.
4. Carefully remove ribs from the pot, and discard the water. Ribs may be grilled immediately, or refrigerated up to 2 days before grilling.
5. Place ribs, meat side up, on grill over medium heat, cook 5 minutes, turning once. Turn ribs over, brush with some BBQ sauce and grill 5 more minutes. Turn ribs over again, brush with more BBQ sauce, and grill 5 minutes longer. Cut racks into 2-rib portions, and serve with remaining sauce.
