*Cauliflower (1/2 of 1 head of cauliflower)
*Corn (1/3 of a can of sweet corn)
*Zucchini (1 Full Zucchini)
*Potato (1/2 of one potato)
*BBQ Sauce (Preferred amount)
*Salt (Preferred amount)
*Pepper (Preferred amount)
*Spinach (Preferred amount)
*Daiya Ranch (Topping drizzle, preferred amount)
*Olive Oil (1 Tbsp.)

Directions:
First, cut up 1/3 of a head of cauliflower, 1/2 of one potato, and 1 full zucchini. I cut up the cauliflower in small bite size pieces, the zucchini in small slices, and the potatoes similar to a french fry-type shape. Then, take one large pan and coat with olive oil. Place all of the veggies (potatoes, zucchini, and cauliflower) on the pan and add your seasonings. Put the veggies in the oven for about 15 minutes at 350 degrees. While the vegetables are cooking, drain one can of sweet corn (or whatever corn you prefer) and microwave for 2 minutes. Take out your bbq, ranch, and spinach while the vegetables are cooking. Take a large bowl, and place a decent handful of spinach at the bottom. Once the vegetables are finished, take the cauliflower and toss in bbq sauce. Then, add the cauliflower, zucchini, and potato slices to the bowl as well. Next, drizzle the Daiya ranch over the mix of veggies! (I dilute my ranch with water to help drizzle it easier; the ranch is incredibly thick.)
