1 large breast of lamb, cut into ribs
2 1/2 cups water
1 tablespoon vinegar

Sauce – Ingredients
4 tablespoons EACH soy sauce, honey, plum or other red jam
4 teaspoons vinegar
2 teaspoons EACH Worcestershire sauce, dry mustard ketchup, lemon juice
Salt and pepper to taste

For the Ribs –
Remove any excess skin and fat from ribs. Put the water and vinegar into a saucepan and bring to a boil. Place ribs in boiling water and simmer, covered for 15 minutes. Remove ribs and drain well. Place ribs in a roasting tin.

For the Sauce –
Combine all of the ingredients for the sauce and simmer for 4 minutes. Taste and adjust seasoning if necessary. Pour sauce over the meat and cook, in a moderate oven (300 degrees) for about 30 minutes.
