1/2 cup freshly ground black pepper
1/2 cup salt
1/2 cup adobo
3/4 cup paprika
3/4 cup chili powder
2 tablespoons each cinnamon and allspice

Mix all ingredients together mixing well. Store in an airtight container. Use for slow cooked foods or as a spice for your meats and poultry.
