"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
1 rack of baby back pork ribs
1 cup water
½ cup apple vinegar
BBQ sauce
your favorite dry rub

Directions:
Directions:
Remove the lining from the bottom side of the ribs with a butter knife. Rinse ribs and rub your favorite rub on the ribs (I use Williams or Famous Dave's). Pour water and apple vinegar into pot. Place the instant pot rack in the pot. Wrap the ribs inside the pot with meat towards the outside. Put the lid on and press the meat button and set to 25 minutes. Remember to close the vent. When time is up wait 10 minutes for the pressure to release naturally, 10 minutes. Place ribs on a baking sheet and spread sauce across the ribs and broil in the oven for 5 minutes to caramelize the sauce. Enjoy!!

*We get fall of the bone ribs every time.
