"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

8-12 chicken thighs, boneless, skinless
1/2 cup apricot jam
1/4 cup barbecue sauce
1 tablespoon garlic, minced more or less to taste
1 tablespoon onion flakes
cooking spray

Directions:
Directions:
Prepare an 8x8 or 9x9 inch pan with tinfoil and cooking spray. Set aside. Preheat your oven to 375 degrees. In a medium sized bowl, combine apricot jam, garlic, onion and barbecue sauce. Taste mixture to see if you want to add more garlic or any other seasoning. Add chicken and toss to coat. Dump into your prepared pan. Bake for between 25 and 30 min if you are using 8 chicken thighs. If you are using 12 chicken thighs this dish will take between 50-60 minutes to cook. When the thighs are touching your cooking time drastically increases! Baste chicken at least once while baking. Serve with a spoonful of sauce on top of each thigh. Serve and enjoy!
