4 lbs boneless beef short ribs cut into 4 inch long pieces
2 tsp kosher salt
1 tsp black pepper

for the bbq sauce
1 cup ketchup
3/4 cup dark brown sugar packed
1.5 tbs apple cider vinegar
1.5 tbs. worcestershire sauce
1.5 tbs dijon mustard
1.5 tsp. chili powder
3/4 tsp garlic powder
1/4 tsp cayenne pepper

season the short ribs with salt and pepper and put in 9x13
combine all of the ingredients for the bbq sauce in a small bowl and stir until smooth
pour 1/3 of the sauce (about 1/2 cup) over short ribs. flip over and pour another 1/3 of the sauce on top. save last 1/3 to pour over ribs when cooked
cover with aluminum foil and roast for 2.5 hours.
take out some liquid so tops are exposed
cook another 30 min till meat is tender
