5 Lb. Beef Brisket
2 tsp. Salt
¼ tsp. Pepper
2 Onions, sliced
4 Celery Stalks
1 C. Chili Sauce
1-12 oz. Beer

Directions:
Directions:
1. Heat oven to 350º F.
2. Place beef on a roasting pan, fat side up. Season with salt and pepper.
3. Place onions, celery and chili sauce over beef.
4. Add ¼ C. water to the bottom of the pan. Roast, uncovered, basting often until meat becomes browned then cover..
5. Allow for 1 hour of cooking time for every pound of beef.
6. After beef has baked 3½ hours, pour the beer over it and re-cover. Cook another 1½ hours.
7. Drain fat off of the meat and let the fast rise to the top.
8. Skim off the fat on the drippings and throw away.
9. Slice the meat and serve with broth and water up to ½ C. as needed.
