4-6 medium potatoes, peeled and cut into cubes
1 cup baby carrots or 2 large carrots peeled and cut into cubes
1 large onion, cut into wedges
3-1/2 pounds beef short ribs
1 cup ketchup
1/4 cup water
1/4 cup red wine vinegar
1 tablespoon paprika
1 teaspoon chili powder
1/2 teaspoon dry mustard
dash garlic powder
1 teaspoon worcestershire sauce
1 tablespoon cornstarch
1/4 cup water

Directions:
Directions:
Put potatoes and carrots in crockpot, add onion and beef. Combine remainder of ingredients except for cornstarch and 1/4 cup water, and pour over beef. Cover and cook on low for 8-10 hours.
Transfer juices to saucepan and simmer for 5 minutes. Combine cornstarch and 1/4 cup water, stir until smooth and add to juice. Stir and cook about another minute or until thickened, serve over beef and vegetables.
