1 cup frozen corn kernels, thawed
1 can creamed corn
1 cup cottage cheese
1 box Glory or Jiffy cornbread mix
2 eggs

3 cups cooked chopped chicken (Rotisserie chicken is amazing - and easy!)
1 cup BBQ sauce
1 cup cheddar cheese, shredded

Directions:

1. Preheat oven to 350.  Lightly spray a 9x13-inch pan with cooking spray.

2. Mix together corn, creamed corn, cottage cheese, cornbread mix and eggs.  Pour into prepared pan.  Bake 30 minutes.

3. Toss chicken with BBQ sauce.

4. Remove cornbread casserole from oven.  Top with chicken mixture and sprinkle with shredded cheese.  Bake an additional 10-15 minutes, until cheese is melted and cornbread is done.

Oh man, this is good stuff. It is SO good, AND it is extremely easy (Two crucial criteria for every favorite recipe of mine, haha). Once when I was making the original recipe, I couldn't find the sour cream, so I used cottage cheese instead, and now I always use it in this recipe! So feel free to sub back in the sour cream if you prefer, but if you want the added tummy-filling protein, may as well keep it! Enjoy! :)
