5-6 lb sirloin beef roast
5-6 cloves garlic
2 tbsp salt and pepper
1 tsp seasoning salt
1 tsp oregano
1 tsp garlic salt
1 tbsp steak rub
1 tbsp hot pepper flakes

tin foil
newspapers
meat thermometer
paring knife

Directions:
Prepare 24 hours prior to BBQ

Use paring knife to stab 1-2 inch deep holes in roast
Place cloves of garlic in each slice
Mix all spices together in bowl and rub the roast completely with the mix
Cover and let sit in fridge for 24 hours
4 hours prior to BBQ bring roast out of fridge and warm to room temperature (about one hour)
Heat BBQ to 375º
Wrap roast with 2 layers of tin foil, 2 layers of wet newspaper and 2 more layers of tin foil
Cook at 375º for 3 hours then test with meat thermometer (135º medium rare, 145º medium to well done)
Pull roast and let cool with foil and newspaper removed for ½ hour
Slice and serve
