Directions:Generously season the ribs with the seasoning (I use Jack Stack All Purpose Seasoning) and dried thyme. Place in a heavy pot or baking pan and pour the beer in the pan. Add beef stock if there's not enough liquid in the pan or simply add another beer! Bake covered for about 2 1/2 to 3 hours at 300º. The ribs should be tender but not falling off the bone.
Remove the ribs and pour the beef juice through a gravy strainer to remove the excess fat. Pour the beef juices into a medium pan and add a generous amount of molasses to the pan (about 1/4 to 1/3 cup). On medium heat simmer and add several shakes of hot sauce and about 1/2 to 1 tsp of black pepper. Taste the sauce and adjust the molasses and hot sauce accordingly. The sauce should be sweet and spicy but not burn your mouth off.
Grill the ribs on medium heat and baste with the sauce often. The ribs tend to burn because of the molasses so watch carefully. Use most if not all of the sauce. |
