4 lb. spareribs
1 c. brown sugar
1/2 c. chili sauce
1/4 c. ketchup
1/2 c. dark rum
1/4 c. soy sauce
1 t. Worcestershire sauce
1 t. mustard powder
2 cloves garlic, crushed
1/8 t. pepper

Cut ribs into bite sized pieces. Line roasting pan with a double thickness of foil. Place ribs in pan and seal ribs tightly in foil. Bake 1 hour at 350º. Unwrap ribs and pour off drippings. Combine remaining ingredients to make a marinade and pour 1/2 of marinade over ribs.

Continue baking for 1 1/2 hours uncovered and then covered for another hour. Baste ribs with remaining marinade several times while cooking.

(These are very tasty but I thought they should be recooked by either simmering in water or Grandpa's way with onions and lemon slices.)

January 3, 2003. We tried this recipe again and I precooked them like Grandpa does with a twist: I put the ribs on a rack in the pan, layered onion and lemon slices on top and poured a can of beer into the pan before covering the ribs with foil. I baked them at 350°F. for 2 2/4 hour, then took them out of the oven and threw out the beer, onions and lemons. Marinated them in the rum sauce for awhile then back into the oven for 30 min, but 45 min would have been better to thicken the sauce up a bit more. Delicious, tender and tasty. This is the way to do them!
