3 c. cooked quinoa (I cooked the quinoa with chicken broth replacing water)
2 c. shredded Colby Jack Cheese divided
2 c. cooked chicken shredded or cubed
1 15 oz. can black beans rinsed and drained
1 c. whole kernel corn or 2 ears cooked and cut off the cob
1 1/4 c BBQ sauce and more to drizzle on top

Optional garnishes:
Chopped cilantro
chopped green onion
diced avocado
sour cream

Directions:
Directions:
In large bowl stir together quinoa, 1 1/2 cup cheese, chicken, black beans, corn and BBQ Sauce.
Put mixture in baking dish and sprinkle with remaining cheese.

Bake at 375º for 15-20 minutes.
Remove from oven and drizzle top with a little extra BBQ Sauce and top as desired with optional garnishes.
