Salt
Pepper
Garlic Powder
Onion Powder
Dry Mustard
Onions, thickly sliced
1 cup hot water
2 tbsp cornstarch
1 cup cold water

Directions:
Directions:
Place brisket in large baking pan one day prior to cooking, fat side down. Rub with salt and brine overnight in refrigerator covered.
Remove from refrigerator and bring to room temperature. Mix seasoning ingredients together and rub onto the surface of the meat.
Bake in 350º oven for 1 hour or until onions are browned and meat has a crispy bark to it.
Reduce heat to 275 degrees. Add beef broth or stock to the pan so there is at least 1/2 inch on the bottom of the pan. Cover with aluminum foil, seal tight. Continue cooking for 2-5 hours, depending on your brisket size (4lb=2 hours, 8lbs=3 1/2 hours, 12 lbs=5hrs) or until internal temperature is 180 degrees.

To make gravy, combine cornstarch dissolved in cold water, add to cooking liquid in saucepan. Cook until boiling and continue until thickened.
Optional: use dried onion soup mix in addition to salt, pepper and garlic to season brisket prior to cooking, before layering onions on top.
